This pumpkin pecan cobbler dessert is so silky, unique and very delicious! You will need 9 minutes to prepare it, plus around 40 minutes to cook – and voila! To da table, please! It is a modern autumn recipe ideal for young people because they don’t want to spend a lot of time in the kitchen but they want to eat beautiful new desserts…at least in my experience. Anyway, here is the recipe:
Ingredients:
- 1 cup (plus 3 tablespoons) all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- A pinch of salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 cup pumpkin puree
- 1/4 cup vegetable oil or melted butter
- 1/4 cup milk
- 1 teaspoon vanilla extract
For the topping:
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 1/2 cups very hot water
- 1/4 cup chopped pecans

Instructions:
- Preheat oven to 350°F/180°C/Gas Mark 4.
- In a medium bowl, combine together flour, baking powder, salt, sugar and all spices. Set aside.
- Next, in a smaller bowl, combine together pumpkin, melted butter, milk, and vanilla extract. Add wet ingredients into dry ingredients; mix to make a thick batter. Spread into an 8-in. casserole dish with high sides.
- Then, in a separate bowl, combine brown sugar, sugar, and pecans. Spread over the top of the batter. Pour hot water all over and bake for 40 minutes or when is set. (Note: Make sure to put on a baking sheet in case it bubbles over.)
- Cool around 10 minutes before serving. Serve with some extra pecans and vanilla ice cream (if desired).
