Instructions:
- Preheat oven to 300°F/150°C/ Gas Mark 2. Grease baking sheets and coat lightly with flour, remove the excess.
- Sift the salt and flour together 2 times. With an electric mixer, whisk the egg yolks with ½ of the sugar till thick enough to leave a ribbon trail when the whisks are lifted.
- Next, take another bowl, add the egg whites and beat until stiff. Whisk in the remaining sugar till glossy.
- Then, sift the flour over the yolks, spoon a large dollop of egg whites over flour, and gently fold in with a large spatula, putting the vanilla. Fold in the remaining whites.
- Spoon the batter into a pastry bag fitted with a plain nozzle. Then, pipe 4″ long lines on the prepared baking sheets around 1-inch apart. Sieve over a layer of icing sugar. Turn the sheet upside down to get rid of any excess sugar.
- Finally, bake for around 20 minutes, until crispy on the outside but soft in the center. Remove from the oven and cool slightly on the baking sheets, around 5 minutes. Transfer to a wire rack and let it cool completely.
