Shout out to all pina colada lovers out there! This recipe is ideal for you! Delicious pina colada panna cotta with pineapple sauce is real refreshment and enjoyment! I really like the taste of both pannacotta and pina colada and this dessert is absolutely my favorite! The smell of coconut and pineapple in the kitchen…mmm, marvelous! Try the recipe:
Ingredients:
For the Panna cotta:
- 10 g packet gelatin (or 3 gelatin leaves)
- 230 ml/8 fl oz. /1 coconut milk
- 250 ml/8 fl oz. /1 cup heavy cream
- 1 ½ tablespoon Malibu liqueur (or white rum)
- 5 tablespoons pineapple juice
- 25 g/1 oz. / 1/8 cup caster/superfine sugar
For the pineapple sauce (optional):
- 8 oz./227 grams (1 can) pineapple chunks (along with the juice)
- 3 tablespoons sugar (to taste)
- 2 tablespoons water
Instructions:
To make the Panna cotta:
- Into a heatproof bowl, pour 75 ml/3 fl oz. /5 tbsps. almost-boiling wate, then add the powdered gelatin.
- Stir until dissolved, then leave to cool. If using gelatin leaves cover the leaves with the water and leave for 20 minutes or until softened.
- In a heavy-based saucepan, pour the coconut milk, heavy cream, liqueur and pineapple juice; stir in the sugar. Bring to the boil, reduce the heat and simmer for 5-8 minutes until the sugar has dissolved.
- Remove from the heat and stir in the gelatin liquid in a thin, steady stream or add the softened leaves and stir until dissolved. Leave to cool.
- Pour the milk mixture into four 150 ml/ ¼ pint/ 2/3 cup ramekins or small dishes. Chill in the refrigerator for at least 1 hour until set.
To make the pineapple sauce:
- Meanwhile, make the pineapple sauce. Place the fruit along with the juice from the can into a saucepan with the sugar and water.
- Place over a gentle heat and cook for 5 minutes or until the sugar has dissolved and the fruit is beginning to collapse.
- Serve with the set Panna cottas.
